Old-Fashioned Baked Beans

INGREDIENTS

  • 1 pound Soldier beans
  • 1/2 cup molasses
  • 1/2 cup maple syrup
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ginger
  • 1 medium onion, cut up
  • 1 small piece of salt pork, cut up in pieces

INSTRUCTIONS

  1. Soak Soldier beans overnight in enough water to cover all.
  2. Parboil beans with 1 teaspoon baking soda until skins burst by blowing on a spoon.
  3. Rinse well and put in bean pot. Add enough water to cover beans well.
  4. Cover, and bake 2 to 4 hours at 350F.
