- 8-ounce container soft tofu, drained
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1 teaspoon lemon rind
- 1 teaspoon lemon juice
- Place all ingredients in blender, and whip for 5 minutes.
- Stir four or five times, and then whip again for 5 minutes until creamy. Serves 4 to 6.
